Egg Muffins
Preheat oven to 375 degrees. Spray 8 muffin cups with Pam.
Beat 6 eggs together in a large bowl. Sauté in a pan with one tablespoon of olive oil, chopped bell pepper, onion, garlic,mushrooms, spinach salt & black pepper. Add to the muffin tin and pour the beaten eggs over the veggies.
Bake in the preheated oven until muffins are set in the middle, 18 to 20 minutes.
